Strawberry Cake

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.


In a large mixing bowl, cream together the granulated sugar and softened butter until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.


Gradually add the flour mixture to the creamed butter mixture, alternating with the milk. Begin and end with the flour mixture, mixing well after each addition. Gently fold in the pureed strawberries until well combined. If desired, add a few drops of red food coloring to enhance the color.


Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.


Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.Once the cakes are cooled, you can frost them with whipped cream or cream cheese frosting if desired. Decorate with fresh strawberries on top for an extra touch.
